Salads are green – in more ways than one

Salads, they are delicious, healthy, low fat and all in all good things to eat. Did you know that salads that are actually green in more ways that one?

Salads are not only good for your health and your figure, but they go a long way to helping the environment too. By reducing the amount of meat you eat, you help to cut back on the amount of pollution the meat industry creates. When it comes to salads you can also select what items are in season, or choose ingredients that might be local in a particular area. Here is a lovely recipe that has the health benefits of salads and is made with good ingredients that have less of an impact on our earth.

Roast Pumpkin, Macadamia and Rocket Salad. This salad requires:

1⁄4 pumpkin, cut into medium sized cubes
2 red onions, cut into wedges
150g bag of rocket
100g macadamia nuts, roughly chopped
2 tsp honey
2 tsp mild mustard (any type)
2 tbs white wine vinegar 1⁄3 cup olive oil

Preheat oven to 180°C. In the oven, roast the pumpkin and onions untiljust cooked, about 20 minutes. Take them out of the oven and allow to cool. Put the rocket leaves, cooled roasted onions and pumpkin in a large salad bowl and sprinkle the macadamia nuts on top. In a separate bowl, mix together the mustard, honey, vinegar and oil to make a dressing. Pour over the salad and serve immediately – a delicious and unusual dish.
